The “other” Chicken & Brown Rice

Serves 4

Tired of the same old chicken and brown rice? Try this tasty gourmet style alternative in your quest for health!

  • 4 Chicken Breasts
  • ½ cup of Marinade brand balsamic vinegar marinade
  • ½ tablespoon of oregano
  • 1 tablespoon of crushed black pepper /to taste
  • *½ tablespoon of salt / to taste

Pam cooking spray/ fat free

4 servings of brown rice / preferred brand

  • Nutritious Brown Rice Medley
  • Add mixture below:
    • 1/8 cup chopped carrots
    • 1/8 cup chopped shallot onions
    • 1/8 cup chopped “baby-bella” mushrooms
    • 1 tablespoon garlic salt
    • 1 tablespoon onion powder

Pour cold marinade over chicken breast and chill for at least 30 min. to 2 hours.
Begin by preparing the nutritious brown rice medley. Prepare brown rice by brand directions and add the mixture once the rice has been brought to a boil. Cook until rice is cooked and fluffy.
In a large skillet over a medium high heat add Pam cooking spray. I prefer the butter flavor. Add the marinated chicken breasts turning the chicken two to three times during cooking. Add black pepper, salt and oregano. Cook approximately 14 to 20 minutes depending on chicken breast size.
Serve over the prepared nutritious brown rice medley. Enjoy this succulent chicken and hearty rice medley!

* Those with hypertension and/or high blood pressure should avoid salt.
** May substitute garlic salt with garlic powder.
One breast and one and a half cup of rice is approximately 350 calories.
