Healthy Miso Noodle Primavera New American Cuisine

Serves One

Savory Sauce

  • 1 tablespoon rice wine vinegar
  • 2 teaspoons olive oil
  • 1 tablespoon Dijon mustard
  • 1 tablespoon miso {Japanese soy bean paste}
  • 1 small garlic clove pressed
  • 1/8 teaspoon chili paste

6 ounces soba noodles

  • 1 carrot, sliced thin
  • 1 cup broccoli florets
  • ½ cup pea pods
  • ½ cup thinly sliced long red pepper
  • 1 scallion, minced

Pam Cooking Spray olive oil spray to liking Prepare savory sauce in a food processor. Combine the vinegar, oil, mustard, pressed garlic, chili paste and miso and puree.

Cook the soba noodles according to package directions. Rinse in cold water. Drain and put in serving bowl.

Steam carrots 2 minutes, add broccoli and peppers and steam another 2 minutes, then add the scallions for [:30 seconds] to finish.

Combine noodles, steamed vegetables and savory sauce in a skillet with Pam Cooking Spray at medium high heat and toss for [:30 seconds to 1:00] until sizzle and a colorful mixture.
