Healthy Chicken Marsala with Shallot Sautee’ Spinach

Serves Four

  • 4 – Thin or Pounded Chicken Breasts
  • 5 – Tbs. Olive Oil
  • 16 – OZ. Pre Sliced Mushrooms
  • 4 – Tbs. Finely Chopped Shallots
  • 1 - Tbs. Minced Fresh Garlic
  • ½ - Cup Chopped Mediterranean Olives
  • 4 – Tbs. Flour All Purpose
  • ¾ - Cup Fat Free Chicken Broth
  • 1/4 - Cup Dry Marsala Cooking Wine
  • 2 – Tbs. Half & Half
  • 4 – Cups Fresh Spinach / the more spinach the better!!!

Pam Olive Oil Fat Free Cooking Spray

Marsala Sauce **
Medium to Medium-High heat - Sautee’ garlic, 2 Tbs. shallots, mushrooms and olives with Pam Olive Oil non fat cooking spray [use liberally] for 3 minutes [stir frequently]. Once mushrooms appear slightly softened, add broth and Marsala Cooking Wine and simmer for 5 min

Chicken – use separate skillet

Use thin chicken breasts or pound to approximately 1 inch think. Prepare chicken breasts with salt and pepper to taste and dredge with flour.

Medium High heat – Add 4 Tbs. of olive oil to skillet and cook approximately 3 minutes on each side for a total of 3 turns. Next, stir in half and half and agitate briefly. **Add the prepared, Marsala Sautee’, to the chicken and simmer 3 to 5 minutes.
Sautee’ Spinach
In a large skillet on medium to medium high heat ad 1 Tbs. of olive oil to 2 Tbs. of chopped shallots and cook to until fragrant [one to two minutes]. Next, add spinach and spray liberally with Pam Olive Oil Cooking Spray until spinach is slightly wilted [two to three minutes].

Serve Healthy Chicken Marsala and Shallot Sautee’ Spinach and enjoy a guilt free delight!
